A prego roll is a Portuguese steak sandwich: a thin steak marinated with garlic, grilled quickly and served in a soft Portuguese roll, usually with peri-peri sauce. It is one of the most-loved Portuguese takeaway dishes in South Africa.
What is in a prego roll?
- The steak – a thin cut of beef, marinated with garlic and grilled or pan-fried fast so it stays tender.
- The roll – a soft, crusty Portuguese roll (pão) that soaks up the juices.
- The sauce – peri-peri for heat, or keep it simple and let the garlic do the work.
Prego vs bifana vs chicken prego
A prego uses beef steak. A bifana is the pork version – marinated pork steak in a roll. A chicken prego swaps the steak for grilled chicken fillet, basted in lemon & herb or peri-peri.
How to eat it
Most people order a prego with chips. At Parreirinha Rapido Illovo you can order a prego roll on its own or with chips, and the same goes for chicken prego and bifana rolls – see the Portuguese Rolls section of our menu for prices.
